How are hotels and restaurants selected?

Does the itinerary also work offline while I am traveling?

No. You can also browse many example routes and use them for inspiration. They show how a trip can be structured, which stops work well together, and which ideas you may want to take into your own planning. You then start your personal planning fresh with your own inputs.
